Plant-based Chili

The weather here in North Georgia has taken a sudden chilly turn, and that made me think of making a pot of chili!

The recipe below calls for canned beans, but you can by all means use dry--I often do! To modify the recipe for dry beans you would just use a pound of soaked pintos and 6 cups of water and put them in the pressure cooker for 20 minutes. (Pintos are one of the beans that I have discovered requires soaking just to get the gas out!)

If you are sticking with the canned beans, you can absolutely make this recipe happen on the stove-top. You will just need to soften up you veggies by sauteing them in a little oil before adding the other ingredients to the pot. Simmer over medium heat until heated through. It will just take a little more effort than tossing everything into the pressure cooker and walking away for 10 minutes, but it is till super easy!

I use the same chili seasoning mix for my chili as I shared with you previously for black beans, but here it is again just so you don't have to hunt for it. I usually mix up a large container of this mix and just have it on hand since beans are a big staple in our diet, so my parts are 1 cup each chili and onion powder and 1/2 cup each of cumin and garlic powder.

Chili Seasoning Mix:

Chili Powder 2 Parts

Onion Powder 2 Parts

Cumin 1 Part

Garlic Powder 1 Part

This chili is perfect served in a bowl with a side of corn bread, or use it to top mac 'n cheese, hotdogs, or baked potatoes! Enjoy!

Ingredients

1 Tbl Garlic, minced

1/2 cup Onion, diced

1/2 cup Green bell pepper, diced

3-4 Tbl Chili seasoning mix (above)

1 15oz can Pinto beans

1 15oz can Kidney beans

1 15oz can Tomatoes - diced

1/2 cup Burger substitute/TVP

1 Tbl Braggs*

3 Tbl Nutritional Yeast*

Salt to taste

Instructions

Place all ingredients into a pressure cooker. DO NOT drain liquid from beans. Set on 10 minute soup setting.

Notes

*Braggs and Nooch can be subbed out for bullion of your choice if you prefer, 1-2 Tbl.

I RARELY measure seasoning when I am cooking. So you may want to start with 3 Tbl mix and work your way up to more based on your personal taste. If it looks good and smells good I know I am on the right track!
