Super Awesome Gluten-free Brownies

These brownies are so easy to make! They do not have any obscure ingredients and they don't have a weird gummy texture that you sometimes get with GF recipes. These brownies do come out a bit more cake-like than the traditional gooey goodness of wheat flour, but if you throw in some chocolate chips, or better yet chocolate CHUNKS, you won't feel like you are missing a thing!

At the restaurant we would throw in some mini chocolate chips, but I recently found Enjoy Life Chocolate Chunks at Publix and they have forever changed my brownies! They are a little pricier but so worth it! I have linked the text to Amazon where you can buy it as an add-on item for a little less than you will pay at Publix, so if you do a little planning ahead you can save.

Ok, so that batter will look a little greasy, or shiny, but that is how it is supposed to look! It will be tempting to skip lining the pan, or spraying with cooking spray, but you need to or you will leave some of the chocolaty goodness stuck to your pan! Obviously if you are worried about calories this recipe is NOT for you!

Depending on the size of your pan you may need to adjust the cooking time a bit. The 50 minutes noted below if for a 9x9 metal pan. If you use a 9x13 pan your brownies will be thinner and need less cooking time. So just keep an eye on things. When a toothpick comes out relatively clean then you are good (a few moist crumbs are okay if you want a gooier texture).

Super Awesome Gluten-free and Vegan Brownies

Ingredients

GF Flour* 2 cup Cocoa Powder 1 cup Sugar 2 cup Baking Powder 1 tsp Salt 1/2 tsp Milk 1 2/3 cup Vanilla 1 tsp Oil 1 cup

Instructions

Mix all dry ingredients in a medium bowl. Be sure to break up any clumps of cocoa powder.

Add the wet ingredients to the bowl. Use a hand-mixer to mix until smooth on a medium setting.

Line a 9x9 pan with parchment and evenly distribute the batter in the pan.

Bake at 350 degrees for about 50 minutes.

Notes

*I use Bob's Red Mill GF baking flour.

OPTIONAL: Fold in a 1/2 cup of mini chocolate chips or chunks to the batter before baking.
